  1. Cortar la pechuga en estilo mariposa.
  2. Colocamos un poco de papel film en nuestra mesa de trabajo. Encima ponemos la pechuga y la tapamos con más papel film. Con un martillo u otro objeto pesado, golpeamos la pechuga. La idea es estirarla y ablandar sus fibras.
  3. Sazonarla con Sal y Pimienta.
  4. Luego de retirar la pechuga del papel film agregarle el jamón y el queso, de manera que el jamón proteja al queso y enrollarlo.
  5. Para empatizar lo pasamos por harina luego el huevo y después por pan rallado.cuando esté empalizado freír a 250 f hasta dorar.
  6. Terminarlo en el horno (350˚F por 10 minutos y Servir con Salsa Velouté.
  7. Para el Zucchini se corta a la mitad(a lo largo) y se retira lo del centro.
  8. Salpimentar y colocar aceite de oliva y llevar al horno aproximadamente 8 minutos.
  9. Limpiar los hongos y cortar en brunoise al igual que la cebolla.
  10. En un sartén colocar mantequilla y sofreír la cebolla hasta transparentar, colocar champiñones y salpimentar.
  11. Luego desglasar con vino y terminar con limón y perejil para después añadir crema y dejarlo reducir.
  12. Rellenar los zucchinis de la mezcla de hongos y cubrir con queso rallado, aceite de oliva y perejil.
  13. Volver a llevar los zucchinis al horno por unos minutos y servirlo junto al cordón bleu.
