- 1 pavo de 3 kilos
- Para la salsa:
- 3 chiles anchos
- 3 chiles guajilo
- 1 chipotle
- 1 pedacito jengibre
- cominos

- 4 pimientas
- 1 cerveza
- 1/4 de mantequilla derretida
- Para el relleno:
- 4 manzanas en cuadritos
- 2 tazas arándanos
- 1 pimiento morrón verde en cuadritos
- 1 pimiento morrón amarillo en cuadritos
- 2 tzas nuez picada
- 1 cebolla morada bien picada
- 1/4 champiñones en trocitos
- 250 grms tocino picado
- al gusto Sal y pimienta

- Limpiar muy bien el pavo una vez que se haya descongelado, colocarlo en una charola amplia y honda.
- En una bandeja vaciar el contenido de la cerveza, y mezclar junto con el tomillo, albahaca, pimienta, sal mantequilla, romero, y sal. Calentarlo unos minutos y bañar el pavo con esa mezcla.
- Para la salsa... hervir y desvenar los chiles, colocarlos en la licuadora y en un sartén asar la cebolla y el ajo hasta que tomen un tono café ligero, poner la cebolla y el ajo y los jitomates asados en la licuadora con un poco del agua en la que hervimos nuestros chiles. Licuar muy bien y después vaciar la mezcla en una cacerola a fuego medio. Cuando empiece a hervir... sazonar.
- Para el relleno... una vez picados los ingredientes, mezclarlos y poner a parte.
- Calentar el horno previamente para poder cocer nuestro pavo, a 200° C durante 20 minutos, mientras bañar con la salsa el pavo por ambos lados incluyendo el interior, y vaciar también la mezcla hecha con cerveza, y cubrir con papel aluminio.
- Una vez cerrado el horno, estar pendientes de la cocción del pavo, ésto lo podemos hacer introduciendo un tenedor, si entra fácil el pavo se esta cociendo bien, si el tenedor entra con dificultad hay que darle más tiempo.
- Después de una hora aproximadanente, sacar el pavo y dejar que se enfríe un poco para rellenarlo e introducirlo nuevamente por 30 minutos más
